This is an ancient Venetian recipe that highlights the incredibly sweet taste of peas grown in the lagoon, resulting in a dish that almost resembles a dessert. The rice and peas are cooked to a very soft consistency, almost like a soup, requiring a bit more broth than usual. For 6 people: -1 medium onion, finely chopped -Half a stick of celery, finely chopped -1 kg of shelled fresh peas -1 liter of chicken broth -300g of Cipriani rice -50 g of butter -Freshly ground pepper -Salt In a saucepan with a capacity of approximately 2 liters, heat the butter over medium heat. Add the onion and celery, and cook, stirring constantly, until the onion has softened, taking care to avoid burning (this should take about 3-4 minutes). Add the peas and half a liter of broth. Cook over low heat without a lid for 15-20 minutes, seasoning with salt and pepper. Separately, prepare a risotto: 10 minutes before the end of cooking, add the pea seasoning, finish cooking by stirring delicately, and serve immediately.
