Tomato caper Mediterranean bruschetta: Slice 1 loaf French bread on the diagonal into 30 slices. Brush with 1/4 cup olive oil. Bake in preheated 400 °F (204°C) oven 8 minutes or until golden brown. Cool completely. Mix 1/4 cup olive oil, 2 cups finely chopped plum tomatoes, 1/4 cup capers, 2 tbsp. cider vinegar, 1 tbsp. basil leaves, 1 tsp. organic oregano leaves and 1/4 tsp crushed red pepper. Let stand 30 minutes. Serve on bread slices. Makes 15 servings.
